As my husband and I spent a few months in Germany last year, we were living right above an organic supermarket. It was literally our downstairs pantry and we enjoyed easy access to a wide variety of European delicacies and fresh produce without ever having to stock up the small apartment fridge, nor actually leave the building.
One of our favorite additions to our meal plan is what my husband affectionately calls the “Blitz Salad.” So after we returned to the US, determined to keep up our healthy regimen laden with veggies, we added this to our weekly meal plan. It’s super fast, easy, low effort and healthy!
All you need is a blender and any veggies you enjoy in a salad. This is also a good way to get rid of some longer-term veggie residents in your fridge that are thinking about going bad soon. Below is our favorite:
- 1 large head of broccoli, cut into florets
- 1 red pepper, cut into pieces, core and stem removed
- 1 apple, core removed and quartered
- 1.5 Tbsp olive oil
- 1.5 Tbsp white balsamic vinegar
- Salt and Pepper to taste
- 1 tsp mustard
- if desired, 1 tsp honey
- nuts of choice (pine, cashew, almond, etc.) for sprinkling on top
Add all ingredients except nuts to a blender and blitz for a few seconds. Watch and pulse until desired consistency of your salad is achieved. Sprinkle with nuts or pine nuts and enjoy! Crusty bread and butter on the side are an excellent accompaniment. Add to a bed of lettuce or arugula if you want more greens!
We have also enjoyed this with brussels sprouts, parmesan, carrots, almonds…the options are endless!
