Salame al Cioccolato

(literally translated as Chocolate Salami)

ExperiencePlus! is proud to share this recipe from the Agriturismo il Rigo located in Val d’Orcia near San Quirico d’Orcia. ExperiencePlus! stopped there for dinner on our 2010 Giro d’Italia Tuscany bicycle tour this past May and the Salame al Cioccolato was loved by all. This is a perfect dessert for summer since it’s served chilled and doesn’t require any baking.

Ingredients (Please be aware that this recipe contains raw eggs):

  • 4 egg yolks
  • ½ pound butterSalame al Cioccolato served on some ExperiencePlus! Bicycle Tours in Italy
  • 1 cup of sugar
  • ½ cup unsweetened  cocoa
  • 1½  tablespoons Rum
  • ½ cup plain biscotti broken into large pieces
  • ½ cup slivered toasted almonds (optional)

Cream the butter, egg yolks and sugar until the mixture becomes pale yellow, add the sugar has dissolved

Blend in the cocoa and mix gently, and finally add the rum.

Add this mixture to the crushed biscuits and almonds, mix together and roll it into a salami shape, using wax paper. Wo

rk quickly so that the butter doesn’t have the chance to melt

Refrigerate at least  4  hours and then serve.  It is also possible to make ahead and freeze.

Serve sliced (cold, not frozen) on a wooden chopping board (just like a real salami).
